The process of making espresso is as fun as drinking it. You will observe that espresso is always just a little different at every coffee shop or cafe you go to. There's not only the difference in blends, but equipment, temp, pressure, the recipe, the ratios, the machine, etc. I would hope that what guides me are two things. 1. To be able to enjoy the pursuit of the exquisite taste of that little magical cup, and 2. To please our customers. When making and drinking espresso, the golden rule should be to enjoy the taste. There are so many new methods of brewing espresso these day, including a choice of using a single origin. I try to keep an open mind, however, most of these experiments have been tried before and it is always wise to study what we have already learned from the Italians. If you drink something that tastes very foreign or that makes your face pucker up, then you have gone down the wrong path. If the Barista tells you that is the way it is supposed to taste, don't believe them - always trust your own taste buds and your instincts. Trust yourself, and trust your customers honest insights. There is still plenty of room for experimentation with espresso as it is an elusive perfection. Although, the joy of the taste cannot get lost in the journey. -Van
