Nuova Simonelli Mythos One Clima Pro

There is plenty of information on the web about the tech specs on this grinder, so I'll just jump into my experience using the Mythos Clima Pro. One of the issues with grinding espresso is that your grinder burrs will fluctuate in temperature throughout the day - based off the volume of grinding you do at any given time. The busier your shop, the hotter the burrs. This means that you are always adjusting the grind and/or the grind time to adjust for the changes. In theory, this grinder was designed to hold the burr chamber at a controlled temp by adding a heating and cooling feature. It has many other features as well, but this consistency was what I was looking for in a grinder. At first, it took some time to adjust to this grinder, as the freshly ground espresso is super fluffy. The fluffy grind weighs less and I found that we were wasting a lot of espresso in overflow. I ended up buying special portafilter (VST Precision) baskets without ridges, so our baristas could tamp without bottoming out. It worked and and we soon found the sweet-spot on our grind. After the break in period, I started to notice a consistency in our grind and our espresso shots that I hadn't seen before. To adjust the grind throughout the day only takes a small tick to finer or courser and it is a breeze to dial in. Also, I was a little worried that the grind time would slow down our baristas, but with the ability to hook the portafilter in makes it hands free and it grinds plenty fast. We can do about 18 grams of espresso in 4.5 seconds. With any piece of equipment, you will want to look for options that will add consistency, quality and speed. In my case, I couldn't be happier with the NS Mythos Clima Pro as it adds all three! -Van
